According to Callie, these are her favorite muffins yet. Now that is saying something! Seems like the perfect Spring Break treat to me :)))
5 large eggs, whisked
1/4c coconut oil, melted and cooled
juice and zest of two medium meyer lemons
1T pure vanilla extract
1/4t pure almond extract
1/2c plus 1T coconut flour
1/2t baking soda
1/4t kosher salt
Preheat the oven to 325 degrees. In a large bowl, whisk together eggs, melted coconut oil, honey, lemon juice, lemon zest, vanilla and almond extract. In a smaller bowl, whisk together remaining dry ingredients: coconut flour, baking soda, poppyseeds and salt. Fold dry ingredients with wet until thoroughly combined.
Fill silicone lined muffin tins evenly, about 3/4 high. Bake muffins until just set, about 20-22 minutes.
